Here's the granola recipe:
6 cups old-fashioned oats
1 1/4 cups nuts, such as almonds, pistachios, walnuts, etc., coarsely chopped (I used almonds)
1/2 cups seeds, such as sunflower, pepitas, etc. (I used sunflower)
1/3 cups flaxseed meal, wheat germ, or a mixture of the two (I used whole flaxseeds)
3/4 tsp. ground cinnamon
3 large egg whites
3/4 tsp. kosher salt
3/4 cup sweetener, such as honey, agave syrup, or molasses (I used honey)
1/3 cup extra-virgin olive oil
1 cup dried fruit, such as sour cherries, cranberries, currants, raisins, apricots, figs, or pineaple, coarsely chopped (I used dried cranberries - I don't personally like them but Jack and Laine do)
I also added 2 tablespoons brown sugar, just because :-)
** I used Quaker Oats and got the rest of the hard ingredients at Sprouts
1. Preheat oven to 350 degrees
2. Combine the oats, nuts, seeds, flax and/or wheat germ, and cinnamon in a large bowl (I added brown sugar here.) In another bowl, whisk the egg whites ad the salt until frothy. Whisk in the sweetner and olive oil. Add wet ingredients to dry ingredients, and stir until the oats are evenly coated.
3. Transfer mixture to two rimmed baking sheets and spread flat.
4. Bake for 20 miutes, then gently flip with spatula, moving granola from the outer edges to the center of the sheet. Continue to cook until golden, about 10 min. more. If the granola starts to brown too much at the edges, gently stir those parts into the middle.)
5. Cool completely on pan, then transfer to a bowl and gently stir in the dried fruit.
What I love about this is that you can put as much or as little of each of the ingredients as you want without messing up the recipe. And you can add/delete any of the ingredients to make it your own. I'm going to get creative next time and add some other things we like.
